This is an interesting paper. It suggests that the white colouring of birch and aspen is at least in part an adaptation against winter browsing by megafauna, including extinct megafauna, as the colour would make it harder to see them in snow. Birch in particular is known to have expanded rapidly following megafauna extinctions and would have been one of the more edible trees available in boreal climates. Source
